You overcooked and now have a fridge full of leftovers.  You can only eat so many cold cut sandwiches.  What else can you do with all that food?


Easy Leftovers Pot Pie  

1 Basic 9" Double Pie Crust (unbaked)

2 cups diced meat

2 cups vegetables (green beans, carrots, corn, whatever you have)

2 1/2 cups liquid (milk, cream, chicken broth, etc.)

1/2 tsp black pepper

1 egg wash (optional)

 

Preheat oven to 375 degrees.

Combine ingredients and pour into pie crust.

Cover with top crust and crimp edges to seal.

Brush with egg wash.

Slit top crust to allow steam to escape.

Bake 40 minutes.



Ham and Cheese Quiche  

1 Basic 9" Pie Crust

1/2 pound sliced ham

3 beaten eggs

1 1/2 cups milk

1/4 tsp salt

dash of nutmeg

1 1/2 cups shredded cheese (cheddar works best)

1 tbsp flour

 

Blind Bake pie crust.

Preheat oven to 325 degrees.

Stir together eggs, milk, salt, and nutmeg.

Stir in ham.

Toss cheese and flour together, then add to egg mixture.

Pour into pie crust.

Bake for 35-40 minutes.

Let stand 10 minutes before serving.


Pie started as a hodgepodge of whatever you could fill it with. There's no reason that shouldn't still be the case. Leftover meat and vegetables can be thrown in to a pot pie.
